硫或不硫？留或不留？
這瓶威士忌被大鼻子選桶出來，花了我三個月的掙扎，最後它出線的原因是因爲它是極好的案例，為了討論「硫化物」在威士忌中的氣味，美或不美，加分還是減分？
幾年前跟威士忌聖經作者Jim Murray 一同上電視台演講，當場一隻帶著些許硫味的威士忌引起了他極大嫌惡的表情，他拒絕在電影台的直播評論那隻酒，所以與他同在講臺上的我只好接手協助解決他的任性。硫味是葡萄酒桶的原罪，由於浸潤過葡萄酒（包含雪莉酒）的橡木桶，吸收了部份葡萄酒液在桶壁之中，當運送酒桶從產區至蘇格蘭，低度的酒精容易在運送的過程質變，因此會在酒桶內加入合理的二氧化硫，充作防腐的作用，因此硫味就住進了葡萄酒桶或葡萄加烈酒桶所陳年的威士忌當中，特別是首次裝填、顏色很深的雪莉桶，硫味重的比率不低。
另一種硫味的來源是製程，不過它多半隱而未顯，不認真喝是喝不出來的，蘇格蘭部份酒廠就會透過蟲桶冷凝特別留住硫味在新酒裡⋯。
這隻格蘭艾樂奇威士忌就是一顆雪莉炸彈，有難得一見爆發性的迷人口感和尾韻，伴隨著強烈的硫味，形成火山爆發般傾洩而出的美感，是教科書的好教材。我猶豫了三個月的理由，是我本身就不是硫味愛好者，硫味對我來說是雪莉桶的瑕疵，第一次試完所有選桶的樣品，它是讓人印象最深刻的，卻因為硫味，將它剔除在外，二次、三次，每一次都忍不住再試它一試，直到距離第一次試三個月後，硫味竟然降低，而原來爆發性的口感更壯大了，太美妙了。這瓶威士忌建議開瓶後幾個月再試試看，融合後的美麗的乳酯味驚人的壯大。
